Solent Hotel and Spa is now home to its own FYR Restaurant – a theatre style kitchen on the outdoor terrace where diners can watch chefs cook on an open fire grill.
Run by hospitality business Daniel Thwaites, the Fareham hotel is looking to replicate the success of its Cumbrian sister property, North Lakes Hotel and Spa, following a £200,000 investment.
Executive Head Chef Jon Marsden Jones will lead the team as they serve up a variety of dishes, including the Solent seafood platter and surf and turf platter – all sourced from suppliers in Hampshire and the Isle of Wight.
There’s also grilled mackerel, burnt apple and seaweed, FYR hay smoked burrata panzanella salad, Monkfish tail with aubergine puree, sundried tomato with pickled cucumber quinoa salad, grilled lobster in hot garlic butter, and a choice of steaks.
The nautically themed restaurant has capacity for 120 diners.
Nathan Chart, General Manager at Solent Hotel and Spa, said: “We’re delighted that we now have the opportunity to introduce this dining experience to our coastal Solent Hotel and Spa property, with a seafood twist – naturally.
“We hope that guests and local neighbours alike will enjoy experiencing the new seafood and grill restaurant and style of cuisine that we’re so passionate about.”
